If your countertops are not properly sealed the oil may stain.
You may be able to change the look of your countertop somewhat by sealing it.
However granite is porous.
I d change up other elements in your space make the black granite work.
It will not adhere and if you do not like the color think about changing the wall color or even the cabinet color to change the look of the granite and compliment it more.
If the oil darkens the counter and you like the look use stone color enhancer to make it permanent.
The photo of the kitchen was to show that the painted counters ended up about the same color as the kitchen quartzite instead of the brown black beige colors they were.
Rub it over the lighter spot or a portion thereof.
Be sure to look for sealer with regular impregnators.
If you must cover with something there is a product called granite transformations they install another countertop right over top of your granite with recycled granite or glass many colours to choose from its expensive thought so not really economical that way and its permanent because you have to stick glue or screw it into granite to safety.
Tackle the countertop without replacing it.
With normal use and proper care they re impervious to heat and staining.
This will immediately absorb into the granite not having an effect on the color.
You can use granite counter top sealer to change the color of the granite but there are sealers that will not change the color of your granite if you do not want it changed.
If it currently has a matte finish as opposed to a polished look try a color enhancer sealer.
Granite is natural stone and best not painted.
